No bake cookie bites


If you’re looking for a fun, easy, healthy, AND delicious treat, one you don’t feel bad about feeding to your kids, try these cookie bites. I originally found this recipe from Gimme Some Oven, so I must give credit where credit is due.

These little balls of yumminess are so good, your kids will never even suspect that not only are they NOT bad for them, but they can even be good for them!

So, the recipe for these doesn’t get much easier. You can invite the kiddos to help, because they are going to have so much fun rolling up the ‘dough’ into balls.

There are a lot of variations for this recipe. You can use whatever nut or seed butter you would like to, add coconut, don’t use flax (although it provides great nutrition), you get the idea. Without further ado, here is the recipe that may just change your life. OK, maybe it won’t, but your taste buds will thank you!

  • 1 cup steel cut oats
  • 1/2 cup sunflower seed butter
  • 1/2 cup mini cacao chips
  • 1/3 cup honey
  • 1/4 cup ground flax seeds (I promise you won’t taste them!)

Add all of the ingredients together, mix well, and place in the fridge to chill for about half an hour. Then roll into balls however large or small you want and serve. The smaller they are, the more you have to share! And trust me, everyone is going to want to share these with you.
